You probably won’t make it through dining at La Malinche without catching notice of “that” jar filled with chunks of fresh pineapple sitting proudly at the edge of the bar, just waiting for the next guest to enjoy it’s simple elixir.

As noted in Boston Common Magazine in 2012, this pineapple-soaked libation has endured through the eras of Cosmopolitans and candy-flavored vodkas with a simple recipe created in the late 1980s. It all began when John Martin visited a bar in Newport that served vodka and pineapple juice shots. The flavor profile captivated him. After some experimentation, he settled on his own version of the beverage — pineapple that had been soaking in vodka for 7-14 days.

Often referred to as “Stoli Doli”, our Chi Cha Martini is a popular staple at La Malinche and is easy enough to make at home if you are able to be patient enough to let the pineapple work it’s magic. Here’s how to do it.

Chi Cha Martini Recipe

8 glasses (appx.)

INGREDIENTS

  • 1 pineapple, cut into chunks
  • 1 bottle (750ml) of quality vodka

DIRECTIONS

1. Place the pineapple pieces into a large container, and pour the vodka over them.

2. Cover, and store at room temperature for a minimum of 7 days.

3. Strain out pineapple, add ice and a serving (6 ounces) of strained vodka to a shaker

4. Shake until chilled and strain into a martini glass. Serve with a pineapple garnish, if desired.
